Spanish Rice Recipe in the Instant Pot

Hi Everyone,

I've been trying to get a great Spanish Rice recipe that I could make in the Instant Pot and I think I might have a keeper!

Spanish Rice

Ingredients:

2 cups of rice. (Pick your favorite, I used Jasmine.)

2 tablespoons of oil. (I used corn oil, but use your favorite.)

2 teaspoons of chicken bullion.

1 teaspoon of cumin.

1 can of tomato sauce. (8oz)

4 cups of water.

1 teaspoon of minced garlic (a few sections of garlic)

½ teaspoon of onion powder.

1 teaspoon of salt.

Directions

Cook the rice in the Instant Pot with the oil till the rice is golden brown on saute mode high. Stir occasionally to keep it from burning. After approximately one cycle (about 30 minutes) the rice should have a nice aromatic smell, almost like cooking popcorn.  Make sure not to forget about it and keep stirring it.

Cancel Sauté mode and add your water first and then the bullion, cumin, tomato sauce, garlic, onion powder and salt. Give everything a good mix.  Put the lid on the Instant Pot, securing it in place.

Next cook on Rice setting and then quick release when done. Be careful, the steam is VERY hot and can burn you easily. Open the Instant Pot being carful not to burn yourself and stir the rice to mix everything up.
